I honestly already had a baked samosa recipe that we loved the texture and flavor of
But…
what if I replace the butter with oil? and what if I replace the flour with a gluten-free flour blend? sounds interesting right? (╹▽╹)
and that’s how this recipe ended up being made, after changing the flour combination three times, I was finally satisfied with the crunchiness of the shell ◕‿◕
Instead of butter, I added Bertolli Olive Oil – Mild Taste to the batter. Then when baking in the air fryer, I used Bertolli Extra Virgin Olive Oil spray. This oil spray is really good for use in the air fryer, it spreads evenly and doesn’t pool. I like it 👌🏻

GLUTEN FREE BAKED SAMOSA

For Dough:
72gr rice flour
30gr corn starch
24gr almond flour
15gr oat flour
3,5gr psyllium husk
1/8 tsp salt
1/2 tsp oregano
1/2 tsp turmeric
35ml @bertolli.id Olive Oil – Classico
78gr cold water
For Filling:
140gr mashed boiled potatoes
85gr shredded chicken (leftover roasted chicken)
2 tbsp green tomatoes
1 tbsp shallots
3/4 tbsp curry powder
1/2 tbsp dried onion
Salt
1 tsp Bertolli Olive Oil – Classico
For Spraying:
@bertolli.id Olive Oil Spray – Extra Virgin
1. Put all dry ingredients in a bowl, stir with a hand whisk.
2. Add Bertolli Olive Oil, continue to mix until the flour is crumbly.
3. Add cold water while stirring with a spoon, kneading lightly until the dough comes together
4. Cover, rest 10-15 minutes
5. Prepare filling ingredients
6. Put all filling ingredients into a bowl, stir, taste, correct the flavor
7. Divide the samosa dough, roll out between 2 wax papers (or sprinkle the work area with starch)
8. Add filling, fold as in the video (make sure the skin is thin and there is not much piling up)
9. Rest in freezer 30 minutes
10. Arrange in air fryer, spray with oil spray
11. Bake at 180°C for 20 minutes (you can also bake in the oven, adjust the duration)
