- Placed on a baking tray: Tomatoes, Red Pepper, Garlic
- Season with salt, black pepper, and cajun. Then, Drizzled with generous amount of Bertolli Extra Light Olive Oil and add aromatic herbs Thyme and Rosemary.
- Roasted in preheated oven 200 C for 25-30 minutes
- Transfer the roasted vegetables to a blender: add beef stock, blend until smooth, pour the blended mixture into a pot over medium heat, stir in coconut milk, bring to a simmer nad let it cook or 10-15 minutes
- And add Bertolli Extra Virgin Olive Oil
- Voilaa, ready to service~
